A grease trap only works while there is room in it. Once it is full, fat passes straight through into the drain, sets in the cold pipe outside and blocks it — usually during a busy service. Emptying it on a schedule costs far less than clearing the drain afterwards.

It is also a legal matter. Under the Water Industry Act it is an offence to put anything into a public sewer that stops it flowing freely, and fat from a commercial kitchen is the classic example. Water companies do visit food premises, and a record of regular cleaning is the first thing to show them.

Car parks, yards and forecourts drain through gullies, channel drains and underground pipes that fill up with silt, leaves and grit. You rarely notice until the first heavy rain of autumn, when the water has nowhere to go and stands across the site or runs into the building.
